There is nothing like a bubbly cocktail on a hot day and if you’ve been part of the Bubbly Side community since last summer, you know we have had quite the obsession with boozy ice cube sparkling wine cocktails.  Well, we’re not giving up on that completely, we’re taking it to a new level with these summer spritz cocktail recipes.

Obviously aperol spritzes are a classic Italian cocktail that are refreshing and delicious.  And we’ve made an aperol spritz cocktail frozen and on the rocks as the classic aperol spritz recipe calls for.  But we decided to take one of my obsessions with my favorite Italian liqueur, limoncello, and create the most refreshing cocktail, perfect for any summer day.

Spritz Cocktails

The perfect summer cocktail, the Limoncello Spritz, in various forms.  I am not sure which of these is the most refreshing cocktail for those hot summer day, so you might just want to try them all for yourself.  

For all spritz cocktail recipes, you really just need some a few simple ingredients.  Since we’re creating a variety of limoncello spritz recipes here, we did use bubbly prosecco in each of these.

Limoncello Spritz Recipe

These easy spritz recipe will have you making this for every happy hour you’re hosting this summer.  The bright lemon flavor is perfect and refreshing for these warm summer nights.

  • 2 oz Limoncello
  • 2 oz Sparkling Water (limoncello, citrus, lemon etc)
  • Bubbly
  1. In a large wine glass filled with ice, add all ingredients.
  2. Garnish with lemon slice.

TIP:  Freeze your sparkling water and use those ice cubes in the cocktail.  When we do this, we use a splash of sparkling water in the recipe itself and then let the ice cube melt and do the rest of the work.

Frozen Limoncello Spritz

This bubbly drink may have just taken my obsession over the top.  If you like a limoncello spritz, you must try this!  Trust me…it’s even better that the original limoncello spritz recipe.

  1. Freeze La Croix Limoncello Sparkling Water Ice Cubes (we used 2 oz tray)
  2. Take 2 ice cubes and 1 1/2-2 oz Limoncello and blend well.
  3. Pour into your favorite champagne glass.
  4. Top with Bubbly.

And you know we coudln’t just make this limoncello spritz and top it with bubbly prosecco and that’s that.  We also decided to try it topped with a sparkling rosé.  That pop of rosé makes it a completely different drink,

Strawberry Limoncello Spritz

Strawberry and lemon, obviously a perfect summer combination.  This will make the drink a little on the sweeter side in the best way.  

  • 2 oz Limoncello
  • 1 oz Strawberry Syrup or 3-4 Strawberries Muddled
  • 2 oz Strawberry Sparkling Water
  • Bubbly
  • Garnish with Strawberry and lemon slice
  1. Add limoncello and strawberries to a cocktail shaker.  Muddle well if you’re using whole strawberries.  Add ice and shake well.
  2. Double strain into your favorite ice-filled glass.
  3. Add sparkling water and bubbly.
  4. Garnish with strawberry and lemon slice.

This is so good.  And I always have frozen strawberries on hand, so it was really easy to create.  But I also wanted to create a simpler version, that is just as refreshing if you didn’t have strawberries handy.

Strawberry Limoncello Spritz Recipe Simplified

  • 2 oz Strawberry vodka
  • 2 oz Strawberry Sparkling Water
  • Bubbly
  • Garnish with Strawberry if you have them.
  1. In a champagne glass with ice, add all ingredients.
  2. Garnish with strawberry.

*TIP:  Freeze strawberry sparkling water and use those ice cubes in the cocktail.  

Raspberry Limoncello Spritz

Last summer I made a sangria that was truly the most perfect drink I made all summer, in my opinion.  And it was a big batch drink for a crowd which I love to do, but sometimes you don’t need a big batch, so I tried to recreate it in a single drink form.  And dang, this is so good.

  • 1/4 cup Raspberries
  • 1 oz Limoncello
  • 1 oz Raspberry Vodka
  • 2 oz Lemon Sparkling Water
  • Bubbly
  1. Add raspberries, limoncello and vodka into a cocktail shaker.  Muddle well.
  2. Add ice and shake.
  3. Double strain into your favorite ice-filled glass (large wine glass or champagne flute)
  4. Add sparkling water and top with bubbly.
  5. Garnish with lemon wheel and frozen raspberries.

And because we can’t just try one version of a new recipe, we created this second version that was just as good.

  • 1/4 cup Raspberries
  • 1 1/2 oz Limoncello
  • 2 oz Lemon Sparkling Water
  • Bubbly
  1. Add raspberries and limoncello into a cocktail shaker.  Muddle well.
  2. Add ice and shake.
  3. Double strain into your favorite champagne glass.
  4. Add sparkling water and top with bubbly.
  5. Garnish with lemon wheel and frozen raspberry.

Summer Cocktail Recipe Tips

  • If we don’t have fun ice cubes or sparkling water ice cubes is toss in frozen fruit to keep the drink chilled and not watered down. 
  • Top with fun sparkling wine like the limoncello bubbly from Wilson Creek Winery.
  • For those who don’t want to add a higher alcohol content to their drink, you can swap the ounces of sparkling water and prosecco.  So you’d add 2 oz prosecco and top the rest with sparkling water or club soda.  
  • Use the flavored sparkling waters if you can find them.  They just add such good flavor to these bubbly drinks.

Create Your Own Summer Spritz

To create these perfect summer bubbly drinks, just follow the simple formula.  

  • 1 1/2-2 oz your favorite type of liqueur
  • Splash of club soda OR equal parts soda water to your liqueur
  • 4 oz Prosecco (or if you’re like me, you measure that bubbly prosecco with your heart)

For good measure, you can garnish with a complimentary piece of fruit like slice of orange or maybe even orange peel.
