I love traditional aperol spritzes and even did a whole side by side comparison of the classic aperol spritz next to pre-made aperol spritz cocktails that made a big splash into grocery stores this summer. 

As the cooler weather approaches, I was inspired by the fall flavors and decided to create your new favorite fall cocktails.

Fall Version of Aperol Spritz Cocktails

​As you know, the Aperol Spritz Cocktail recipe is super easy: 3:2:1

  • 3 oz Sparkling Wine
  • 2 oz Aperol 
  • (1oz) Splash of Soda Water 

In these recipes, we didn’t add a splash of soda water or a splash of club soda.  We replaced that ounce with juice and simple syrup.  But you can certainly add the soda water if you want.  In fact, you can probably find some fun flavors to enhance the fall feel of these cocktails.

Pumpkin Spice Spritz

I am not really a pumpkin spice drink fan, but this fall aperol spritz cocktail recipe won me over.

I, of course, found a way to use my pumpkin ice cube mold.  I simply froze apple cider in the pumpkin mold and placed it into the coupe before adding my cocktail.  If you do this too, you don’t need to add the cider into the cocktail shaker, you can allow the ice cube to melt and provide that flavor there.

  • 3 oz Sparkling Wine
  • 2 oz Aperol 
  • 1 oz Apple Cider or Sparkling Apple Cider
  • 1/2-1 oz Pumpkin Spice Simple Syrup (We used Hipstirs.)
  1. In a cocktail shaker with ice, add aperol, apple cider (or apple juice) and simple syrup.  
  2. Shake well.
  3. Pour into your favorite champagne glass or large wine glass.
  4. Top with sparkling wine or prosecco.

Apple Cider Aperol Spritz 

In all honesty, this recipe was a mistake.  I didn’t mean to make it only because there are so many apple cider cocktails and apple cider spritz recipes out there, I didn’t think you needed another one.  But we really enjoyed it, so I thought I would include it.

  • 3 oz Sparkling Wine
  • 2 oz Aperol 
  • 1 oz Apple Cider or Sparkling Apple Cider (Apple juice works if you can’t find apple cider)
  • 1/2-1 oz Apple Spice or Cinnamon Simple Syrup
  • Garnish with a cinnamon stick and/or apple slice
  1. In a cocktail shaker with ice, add aperol, apple cider (or apple juice) and simple syrup.  
  2. Shake well.
  3. Pour into your favorite champagne glass or large wine glass.
  4. Top with sparkling wine or prosecco.
  5. Cinnamon stick and/or apple slice for garnish

Blood Orange Spritz

We made this with and without blood orange juice.  (They are sometimes really hard to find in Illinois.) Either way, it’s a great drink.  

  • 3 oz Sparkling Wine
  • 2 oz Aperol 
  • 1 oz Blood Orange Juice 
  • 1/2-1 oz Blood Orange Simple Syrup (We used Liquid Alchemist.)
  • Blood oranges for garnish
  1. In a cocktail shaker with ice, add aperol, blood orange juice and simple syrup.  
  2. Shake well.
  3. Pour into your favorite champagne glass or large wine glass.
  4. Top with sparkling wine or prosecco.
  5. Garnish with blood oranges.

Cranberry Aperol Spritz

I personally love cranberry all year long, but this one just felt like Thanksgiving to me. 

  • 3 oz Sparkling Wine
  • 2 oz Aperol 
  • 1 oz Cranberry Juice or Sparkling Cranberry Juice
  • 1/2 oz Cranberry Pie Simple Syrup (We used Hipstirs.)
  • Frozen cranberries for garnish
  1. In a cocktail shaker with ice, add aperol, cranberry juice and simple syrup.  
  2. Shake well.
  3. Pour into your favorite champagne glass or large wine glass.
  4. Top with sparkling wine or prosecco.
  5. Garnish with frozen cranberries.
