Cinnamon and pumpkin smells wafting from your oven with homemade bubbly pumpkin pancakes that are almost ready to be enjoyed! What better way to wake up on a nice crisp morning than with the smell of fall goodness in the air? 

I don’t know about you, but breakfast is certainly my most favorite meal and I love a fresh, homemade spread with some bubbly, of course.  And with fall upon us, I can’t help but take these pumpkin themed recipes and bubbly-ize them.  

This is the perfect easy breakfast to whip up especially if you you’re cooking for a group because it’s made on a cookie sheet.  

Pumpkin Pancake Recipe

Bubbly pumpkin pancakes

Bubbly Pumpkin Pancakes

  • 1½ cups all-purpose flour 
  • 1½ tbsp baking powder
  • 2-3 tbsp brown sugar (depending how sweet you like them)
  • 1½ tsp cinnamon
  • 1½ tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 3 tbsp melted butter
  • ½ cup pure pumpkin
  • ½ cup bubbly
  • Powdered sugar
  1. Preheat the oven to 425F.
  2. In a large bowl whisk together flour, baking powder, brown sugar, cinnamon, and pumpkin pie spice.
  3. In a separate bowl, combine buttermilk, vanilla, pumpkin, melted butter, and bubbly and whisk together.
  4. Slowly pour the wet mixture into the dry mixture. Whisk together until combined. Be careful not to over mix.
  5. Pour batter onto a non-stick 9×13 cookie sheet and bake for 10-15 minutes or until a toothpick comes out clean.
  6. Sprinkle with powdered sugar or drizzle with bubbly glaze.  

TIP: If you don’t have buttermilk, here’s a hack I learned from Fraicheliving for every 1 cup of milk, add 1 Tbsp of either vinegar or lemon juice and let it sit for 10 minutes. It works with any kind of milk too.

Bubbly Glaze

  • 1 cup powdered sugar
  • 3 TBSP bubbly

Combine the two and mix well with a whisk until combined.  If you want it thinner, add more bubbly, if you want it thicker, add more powdered sugar.  

Serving Pumpkin Pancakes

Of course, just like any other pancake you can serve these up with butter and syrup.  For an extra special treat, you can make the bubbly glaze in the recipe or our delicious bubbly whipped cream.  

Pumpkin Pancakes Pair Well With…

While this version of pumpkin pancakes is not overly sweet, you want to pair them with a bubbly that is a bit on the sweeter side, so a dry or extra dry bubbly will compliment these pumpkin pancakes.  Save this image and use it when you’re shopping for bubbly.

Now if you want to get all fancy, you can certainly create fall themed mimosas to accompany these pancakes.

Pear Mimosas 

These are just as easy as every other type of mimosa, but the key ingredient is pear nectar.  As with all mimosas, you certainly don’t have to do the whole 50/50 thing, you can make it to your liking.

To spruce this one up a bit, try added a mix of cinnamon-sugar to the rim of the glass and garnish it with a pear.

Apple Cider Mimosa

Another simple mimosa perfect for the morning.  All you need is apple cider and bubbly.  Again, you can use my favorite question as a guide for the measurements, “Juice for color or for taste?”

You can use a pre-made apple cider, homemade apple cider or if you want a little different flavor, a pumpkin spiced apple cider to create this apple cider mimosa.

The apple cider mimosa would be awesome in a pitcher especially if you’re feeding a small group with all those pumpkin pancakes.  You can use a homemade apple cider or make life easy and buy store bought apple cider and add some cinnamon sticks.

To take this one to the next level, cut up apple slices and put them in a mason jar, add 2 cinnamon sticks and fill to the top with bubbly.  Let them soak overnight. Add one of these apples to each glass before filling them with the apple cider mimosas.  

Whatever you do, do not let these soak more than 48 hours or your apples will be really mushy and no good!
